The structure of vitamin C is similar to glucose. It is a kind of polyhydroxyl compound. The two adjacent enol hydroxyl groups in the second and third positions in the molecule are easy to dissociate and release H+, so it has the property of acid, also known as ascorbic acid. Vitamin C is highly reductive and can be easily oxidized to dehydrogenated vitamin C, but its reaction is reversible. Moreover, ascorbic acid and dehydroascorbic acid have the same physiological function. However, if dehydroascorbic acid continues to be oxidized to produce diketoguloglycolic acid, the reaction will be irreversible and lose its physiological function completely.
